Grilled Middle Eastern Salmon Burgers with Carrot Dressing & Feta Crumble

ABOUT THE RECIPE

Flavor Police! Forks Down…Everyone! We received a phone call from your son Steven who claimed he was forced to eat some grilled chicken you prepared that tasted, and I quote “What I imagined the moon would taste like if it were warm…” I am going to have to write you a recipe that brings flavor and love back into this home.

Ingredients

For the Burgers


  • 1½ pounds of Salmon ground on the largest setting…no worries, the crew at Metro will do this for you, just ask; You can also chop it well with your loving knife.


  • 2 large shallots very finely minced


  • 2 tablespoons of fresh chopped Mint


  • 1½ tablespoons of harissa paste


  • 1 teaspoon of ground cumin


  • 2 teaspoons of grated fresh ginger


  • Salt and pepper


  • Olive oil for brushing burgers


  • A heavy grill pan or a heavy non-stick skillet


  • 2 loves of pita bread cut in half and opened…Heck Yeah Metro Carries Pita


  • ½ cup of good feta cheese…Metro has a Bulgarian Sheep’s milk feta, It Rocks the Casbah


For the Carrot Dressing


  • 3 medium carrots, grated on the large holes of a box grater


  • 1 tablespoon of fresh chopped Mint


  • The juice of 1 a lemon


  • 2 teaspoons of honey


  • 1 tablespoon or more of olive oil


  • ½ teaspoon of cumin seeds


  • Salt and Pepper


Preparation

In a medium bowl combine the ground Salmon with the shallot, mint, harissa, cumin,

ginger, and about ¾ of a teaspoon of salt. Form 4 burgers and let rest in the refrigerator

for 30 to 1 hour.

Meanwhile to make the Carrot dressing, toss the grated carrots with the lemon juice, olive

oil, honey, and cumin seeds and season to taste with salt and pepper

Next, heat your grill pan to medium-high heat and remove the burgers from the fridge.

Brush the burgers on both sides with olive oil and grill them for 3 to 4 minutes per side or

until medium rare when fork tested.

To serve, place a burger in each pita pocket and top with the carrot dressing and

crumbled feta…I would have thrown the recipe book at you, but mine is not published
