ABOUT THE RECIPE
If you are thinking, “What in the Hell does this recipe title even mean?” please know you are not alone. For the record, I originally wanted to call this dish, “Super Mario Makes Fish in His Pizza Oven,” but then I thought, after a couple of glasses of wine, I just really wanted to use my Pizza Oven today. BTW, great dish, just a bad title.

Preparation
Combine all of the Italiano Spice blend ingredients in a small food processor and “whizz”
till smooth. Pat the Salmon fillets very dry with paper towels. Turn the spice blend out
into a pie plate or large shallow bowl. Add the fillets to the spice blend and turn to coat;
cover with plastic wrap and let marinate at room temperature for 20 to 30 minutes. While
the fish is marinating, preheat your pizza oven to 600° Fahrenheit and allow it to heat for
at least 30 minutes. Once the oven has come to temperature, place your cedar planks in
the oven for about 2 to 3 minutes (this is going to help to get the planks to lightly burn
during cooking. Take the planks out of the oven and, working quickly, remove the fish
from the marinade and place it on the Cedar planks. Place 2 lemon slices on each fillet
and place in the pizza oven and cook for 3 to 4 minutes, then rotate the salmon 180
degrees and cook an additional 4-5 minutes. You may need to rotate the fish for another
minute or two until the fish is done or until it is just opaque when fork tested. (Note: The
Plank may catch fire during cooking time. Don’t stop, drop, and roll, just blow it out and
return to the oven.
BTW, the planks will be charring and giving off some smoky flavor, which is the goal
here. To serve, transfer the fish to a serving platter and garnish with lemon wedges and
chopped parsley. Could you roast your veggies in the same oven? Hell Yeah! Could you
whip up a garlic bread situation and pop it in the Pizza Oven? If you answered no to that
question, please know that we will never be friends, but I respect your carb-free life.
