Roasted “Athens” Salmon with a Spicy Tzatziki Sauce

ABOUT THE RECIPE

As the Greek philosopher Epicurus said “Death does not concern us, because as long as we exist,
death is not here. And when it does come, we no longer exist.” In other words, make something
delicious tonight; This Merry Go-round of life will eventually stop.

Ingredients

  • 4 Salmon fillets 6 to 8 ounces each with the skin left on but scaled (Ask your Metro Fishmonger to make these center-cut fillets)


  • ½ cup olive oil


  • The juice of 2 lemons


  • The finely grated zest of 1 lemon


  • 4 cloves of garlic crushed and minced


  • 2 teaspoons of good dried Oregano (Metro has the wild Mountain Oregano)


  • 1 teaspoon of paprika


  • ½ teaspoon of cayenne pepper


  • Salt and Pepper


For the Spicy Tzatziki Sauce


  • 1 small cucumber peeled seeded and chopped


  • 1 cup Lebneh or Greek Yogurt


  • The juice of one lemon or more to taste


  • 1 clove of garlic crushed and chopped


  • 1 teaspoon cumin


  • ½ teaspoon of dried oregano


  • 1 teaspoon or more of your favorite hot sauce (The Calabrian Hot Sauce we have at Metro is the bomb diggity)


  • 1 tablespoon of fresh chopped mint


  • 3 to 4 tablespoons of olive oil


  • Salt and pepper


Preparation

First, make the Spicy Tzatziki Sauce by combining all the ingredients in a small bowl and season

to taste with salt and pepper; this can be made hours even one day in advance.

Next, to prepare the Salmon, whisk together all of the ingredients except the Salmon in a small

bowl; season with a generous amount of salt and pepper and set aside.

Place the Salmon fillets in a re-sealable bag and pour the lemon oil mixture into the bag; seal the

bag and let it marinate for 1 to 2 hours in the refrigerator.

Preheat the oven to 425° degrees

Take the Salmon out of the fridge 30 to 40 minutes before roasting.

Brush a baking pan with olive oil and take the fish out of the bag and place the fillets in the pan,

pour a little of the marinade over each fillet, and discard the rest.

Place the fish in the oven and roast for 18 to 20 minutes or until the fish is just opaque when forktested.

To serve, transfer the fillets to a large serving platter and garnish them with lemon wedges.

Serve the Spicy Tzatziki Sauce on the side and don’t forget what Socrates said “One thing I

know, that I know nothing. This is the source of my wisdom.” Okay, that guy was obviously a

boozer, so let’s forget that one and eat dinner.
