Roasted One Pan Spicy Sweet Calabrian Salmon with Zucchini

ABOUT THE RECIPE

Maybe it’s just me but the words “One Pan” say only one thing; I am feeding folks that I
not only love but want to spend as much time talking to as playfully groping them. In
other words, an easy meal that gets me out of the kitchen and probably into some
amorous trouble.

Ingredients

  • 4 Salmon Steaks 8 ounces each


  • 1 large Zucchini cut in half longways and sliced half-moons


  • 1 large Yellow Squash cut in half longways and sliced half-moons


  • ¼ cup of your best honey


  • Lemon wedges for serving


For the Calabrian Spice Blend


  • ¼ cup of olive oil


  • 3 cloves of garlic crushed


  • 1 teaspoon of kosher salt


  • ½ teaspoon black pepper


  • 1 tablespoon smoked paprika


  • ½ teaspoon turmeric


  • ½ cup of Bomba; Calabrian Chili Paste


  • 2 teaspoons of finely grated lemon zest 


Preparation

Preheat your oven to 400° Fahrenheit.

Now combine all of the Calabrian Spice blend ingredients in a small food processor and

“whizz” till smooth; Fun fact, “Whizz” was also a Break-Dance move I invented in the

80s’.

Place the Zucchini and Squash in a bowl and toss with about 1 tablespoon of the Spice

blend and then arrange on an olive oil brushed, parchment-lined baking pan allowing

room for the Salmon steaks. Season the Salmon steaks on both sides with a little salt and

pepper. Now, place the Salmon Steaks on a plate, and gently slather the remaining Spice

blend all over the fish, flipping to coat well. Next, place the fish on the baking pan with

the Zucchini (allow this to marinate on the counter for about 30 minutes).

Place the pan into your preheated oven and roast for 15 minutes. When your timer goes

off, drizzle the honey over the entire pan and place it back in the oven for another 3 to 5

minutes or until the fish is just opaque when fork-tested. To serve, transfer the steaks to a

platter, spoon the Zucchini around, and garnish with lemon wedges. Drizzle over any

pan juices and for the love of Cod, make a salad and throw in a loaf of bread to soak up

that gorgeous company you have. Oh, one more thing, make sure you get consent for

groping.
