Special Summer, a full Culinary Soul Kiss

Good morning to all of our beloved friends and clients and as the days get shorter and Preseason Football games commence, it could only mean one thing, it's time to give Summer a final goodbye kiss.

 

 

Well I don't know about you but I have some deep regrets regarding not giving the proper goodbye Summer kisses in my day.  One in particular was when I was just a wee fishmonger in the Summer of 1980 when I was working at the United States Youth Conservation Corp Camp.  No, my parents were not trying to punish me, it was actually a work camp where young men and women spent the summer working on Federal Park properties and honing the necessary skills needed to sneak a beer from the adult counselors dorm fridges... but I digress.  That said, there was this one particular lassie that caught the eye of this husky boy and for the life of me I could not get up the cherrystone clams to let her know how I felt.  As we worked side by side that summer we had long conversations, many laughs but sadly I remained in the friend zone.  But then it happened, one of her friends told me the night before camp was over that she had a crush on me.  Holy Crab Cakes! She liked me but by the time I found out it was time to hit the hay so I said to myself, "Self, you are going to tell her you dig this little lady by giving her the most romantic kiss a 14 year old completely inexperienced boy can give." Yes, I call myself "Self" sometimes.  Well the next morning we all brought our things to our parents car and I saw her, I took a deep breath and headed over to her only to make a sound of a puppy who just got his paw stepped on.  Then I gave her my phone number and she gave me hers and then I wimped out and gave her a brotherly hug and some sort of "ear cheek" kiss.  What a Failure!  

 

 

Well that won't happen to this Summer, I fully intend on taking it into my arms and give Summer a full on Dancing Dip Kiss... Yeah, it's a thing.  And this time, there will be no regrets.  Well should you want to give your Special Summer a full Culinary Soul Kiss then look no further than today's recipes featuring Grilled Clams with a Spicy Guinness Butter &  Grilled Herbed Salmon with a Harissa Butter.

Today's Featured Recipes Created With Love for You...


Grilled Clams with a Spicy Guinness Butter Serves 8 for appetizers, 4 for Dinner or Me, home alone on a Sunday Afternoon


Okay, if the title of this recipe doesn't get you into a Culinary induced amorous mood then you my friend, might be suffering from low Joie De Vivre levels.  No need to contact your doctor just fire up the grill and feel the "Love for Life" course back into your veins.
 

Ingredients
For the Spicy Guinness Butter
2 sticks of unsalted butter
3 cloves of garlic minced fine
¼ cup of Guinness Stout
1 tablespoon of Sriracha hot sauce
3 tablespoons of fresh chopped flat leaf parsley
½ teaspoon of salt

 

For the Clams
4 dozen little neck or Top Neck Clams...I prefer the slightly larger Top Neck Clams
(Soak the Clams in ice water for 30 minutes to purge and then give them a good scrub)
2 lemons cut in half

 

How it's done
Melt the butter in a small saucepan over medium heat and cook the garlic until just fragrant, no need to brown it.  Next, add the Stout, hot sauce, parsley and salt and whisk to combine; remove from heat and keep warm.


Prepare your charcoal or preheat your gas grill to high heat.
 

Place clams on the grill racks and close the grill lid.  

 

After about 5 minutes open the grill and place the cut lemons, cut side down on the grill to char.   Grill the clams for 6 to 8 minutes or until they have opened on the grill (Note: they will not open all at once so be patient little chef).  

 

When the clams have opened transfer them to a serving platter and garnish with the charred lemons.  

 

Before serving with a brush "dot" the clams with a little of the butter and serve the rest on the side so each guest can experience their new Zeal for life and love and crusty bread.

Grilled Herbed Salmon with a Harissa Butter Serves 4
Organic Salmon is not only incredibly delicious but is also good for a healthy heart thanks to an abundance of Omega 3 fatty acids.  Harissa Butter on the other hand is good for your soul and can also be used to grease the wheels of annoying dinner guests.

 

Ingredients
4 Salmon fillets 6 to 8 ounces each with the skin left on and scaled
3 cloves of garlic minced fine
½ cup of fresh chopped mint leaves
2 tablespoons of olive oil
The finely grated zest of 1 lemon

 

For the Harissa Butter
½ stick of unsalted butter at room temperature
2 tablespoons Harissa (a spicy Moroccan pepper paste found at all Bedouin Markets and Metro Seafood)
1 small shallot minced very fine
1 teaspoon of finely grated lemon zest
The juice of 1 lemon
1 teaspoon of kosher salt; more to taste

 

How it's done
First make the butter by combining all of the ingredients in a small bowl with a wooden spoon "creaming" the butter; adjust salt if necessary, cover with plastic wrap and set aside at room temperature.
 

Next, in a shallow bowl or pie plate combine the garlic, mint, olive oil and lemon zest.

 

Add the Salmon fillets to the marinade and turn to coat, lightly massaging the marinade into the fish.
 

Prepare your charcoal grill or your gas grill to Medium High heat.
 

Remove the fish from the marinade and season the fillets with salt and pepper; place the salmon on the grill, flesh side down first, for 3 to 4 minutes.  

 

Flip the fish and grill for another 4 to 5 minutes or until the fish is just opaque when fork tested. 

 

Transfer the fish to four soulful plates and place a small dollop of the harissa butter onto each fillet.  

Should you want to double the butter recipe then use the extra for that annoying dinner guest by just smearing some on their lips every time they open their mouths... I swear, in no time everything they say will sound sweet and creamy.
