Embrace a Piscivorous Diet

Good morning to all of our beloved friends and clients who, like me, not only embrace a piscivorous diet but truly see it as a way of life.


It's funny, at least once a week someone will ask me if I like eating fish with a look on their face that says "Hey, you can tell me if you hate fish, I won't tell anyone."  Truth of the matter is I do love fish and some might say in an unhealthy way.  The only reason I know this is that when presenting a stunning Sea Bass to a client once, they commented how my hands ever so gently caressed the fish and how when talking about this gorgeous species my choice of adjectives were more salacious then culinary.  Can you blame me,  who among us hasn't glared passionately at a glistening loin of Sushi Grade Tuna and heard the familiar adult themed bass line in their heads.  Or who hasn't lifted a freshly shucked oyster to their mouth and thought, this is what it must be like to "Soul Kiss" a mermaid.  Come on, you mean to tell me that you never wanted to be chest high in a Bathtub full of Shrimp Cocktail as you gorge yourself into an amorous frenzy.  


Oh dear... you know, when I read this out loud I can see how this might sound more like a perverse obsession than a dietary choice.  Thankfully we are in our "no judge" zone and we can share in the safe space we have created.  Now that said, we will be procuring some fresh never frozen King Crab Legs this weekend and I challenge you not to be filled with butter laden lust when those beautiful legs are introduced to the steamy pot of... Oh my Cod, I am so sorry... I'm doing it again... I promise I will seek help.  In the meantime, I sincerely hope you find today's recipes not only delicious but seductively... I'm doing it again, please forgive me. Seriously, these dishes are super easy and are meant to share with those you love featuring, Whole Pesto Sea Bream (Dorade) over Roasted Vegetables & Parmesan Crumbed Baked Hake.

Today's Featured Recipes Created With Love for You...


Whole Pesto Sea Bream (Dorade) over Roasted Vegetables Serves 4
If you don't enjoy carnal orgies where you and your dinner mates lustfully eat fish off the bone, then you might not want to make this dish. But if this is "your" thing then, by all means, let the games begin.


Ingredients
2 Whole Sea Bream (Dorade) 1½ pounds each Scaled, Gutted and patted Dry with paper Towels- This task will be lovely performed by any Metro Seafood associate: You can use Branzino or Snapper with great results
4 large carrots cut into ¼ inch sticks
1½ pounds of baby red potatoes, quartered
½ cup of your favorite basil pesto; Hello, Metro makes a kick bass one
2 tablespoons of olive oil
2 teaspoons balsamic vinegar
2 cloves garlic, minced
Salt and pepper to taste


How it's done
Preheat the oven to 400° degrees and line a large baking sheet with aluminum foil.


Spread the carrots and potatoes out on the baking sheet. Generously sprinkle everything with salt and black pepper.


In a mixing bowl, stir together the olive oil, balsamic vinegar, pesto, and garlic and rub half of the mixture all over the vegetables. 

 

Place in the oven and bake 30 minutes or until vegetables are just starting to get tender.

 

While the veggies are roasting rub the remaining pesto mixture in and around the fish and season generously with salt and pepper.


When the 30 minute timer goes off remove the veggies and place the fish on top and place back in the oven to roast for another 20 to 25 minutes or until the fish is just opaque when fork tested.


Keeping in mind that this meal is "Sexy Casual", bring the baking pan to the table and garnish with lemon wedges.  Yes, "Sexy Casual" is a real term; in fact, it was my DJ name in college when I used to do the overnight shift.  The show was called "Keep'n It" with "Sexy Casual"... I'll have you know, it was quite the hit with all the folks in the singles dorms. 


Parmesan Crumbed Baked Hake Serves 4
Sure this recipe is a culinary throw back of gorgeous comforting flavors but truthfully I just wanted to say Baked Hake out loud... Enjoy... I know, it's so close to rhyming.


Ingredients
4 fillets of Hake 6 to 8 ounces each; you could also use Cod or Haddock with great success
2 tablespoons melted butter unsalted
2 tablespoons lemon juice
2 cloves garlic minced
¼ teaspoon salt
¼ teaspoon cayenne pepper
½ cup panko bread crumbs
¼ cup parmesan cheese grated
1 tablespoon olive oil
2 scallions sliced very thin for garnish (Green parts only)

 

 

How it's done
Preheat oven to 425° degrees


Place the fish fillets in a glass pie plate


Add the melted butter, lemon juice, garlic, salt and cayenne pepper in with the fish; turn to coat and make sure the fillets are flesh side up.


In a small bowl, mix together panko, parmesan and olive oil. Sprinkle mixture evenly on top of Fish.


Place the Hake in the oven and cook for 18 to 20 minutes or until just opaque when fork tested.


To serve, bring the dish to the table and garnish with the sliced scallions.
