Good morning to all of our beloved friends and clients and for those of you who have completed their Christmas shopping list in late fall, I say to you, congratulations and please pump the brakes,  you are making the rest of us look like slackers.
 

Seriously though, in today's immediate gratification "I want it now" society it is truly hard to get that special someone on your Holiday list a present that says "Hey, I'm  not just hearing you but I'm listening as well, that's why I got you this Bacon flavored toothpaste, I know you're a fan of smoky pork and fastidious when it comes to oral hygiene."  No, chances are your loved one already purchased that when on their last Amazon Prime spree.  Seriously, I long for the heart throbbing excitement of my youth when the raw elation of Christmas morning would literally have  you on the brink of a coronary with the anticipation.  


 

 

One year in particular, I so wanted this Orange Banana seat Schwinn bicycle.   I thought for sure it was a long shot but I pleaded anyway and then Christmas morning came. Well let's  just say that if anyone's child reacted as I did today, you would have dialed 911.  Oh it happened, at first glance of the bike I wailed like I just got a car from Oprah and upon touching this glorious bike I projectile vomited on my sister and before I could thank my parents, passed out from hyperventilation... it was one of the best Christmases of my life. 

 

Today of course you're lucky if you get a fist bump when you see someone open a gift you painstakingly picked out.  Which brings me to my suggestion of a heart woven gift of a home cooked meal.  That's right, this year you will down load that "create a coupon app" and knock out that Christmas list in no time.  Please be aware, although your intentions may be pure, the classic "Good for One Free Backrub" coupon might not be a good one considering the current turmoil of the day.  Instead, think soul nurturing like "A King Crab Night" complete with personalized butter cups and don't forget to include a couple of "Moist Towelettes"  in the card.  Or perhaps a coupon for a "Make Your Own Sushi Night", cleverly making the card out of Nori sheets.  Each Coupon would have to come with small type print letting your loved one know you will also clean up the kitchen mess at nights end.

Today's Featured Recipes Created With Love for You...


Penne Alla Vodka with Shrimp and Chorizo Serves 4
As a Fishmonger I can easily live the life of a happy Pescatarian but alas, some folks need more than is offered by the briny deep.  For those of you, I offer this recipe of understanding and Porkliciousness... yep, it's a word now.  


Ingredients
10 to 14 ounces of Penne Pasta or any short pasta that makes you smile
¾ pound of large shrimp peeled and deveined with the tails removed
½ pound chorizo sausage sliced ¼ inch thick
2 tablespoons of olive oil
Salt and Pepper
1/3 cup vodka
2 cups marinara sauce if you don't have, no worries, Metro makes this
1 good pinch of crushed Red Pepper flakes
½ cup heavy cream
4 tablespoons of chiffonade (leaves stacked and cut into thin ribbons crosscut) basil
Grated cheese for serving


How it's done
Bring a large pot of salted water to a boil. 


Add the penne and cook it according to the package directions. 


Before draining the pasta, scoop out 1-2 cups of pasta water.


In a large, deep skillet, heat the olive oil on medium-high heat until shimmering. Season the shrimp well with salt and pepper.  


Sear them, unmoving for 1-2 minutes. 


When they are ready they will loosen from the bottom of the pan. 


Flip them over and sear until the shrimp is cooked through, another 1-2 minutes. Transfer the shrimp to a bowl.


Add the chorizo to the same skillet and give it a good sear on both sides, 3-4 minutes total. 


Remove the chorizo to the bowl.


Lower the heat to medium-low and add the vodka. Cook for about 30 seconds. 


The vodka will be almost cooked off. Then add the marinara sauce, red pepper flakes (if using), and cream and bring the sauce to a simmer.


Once the pasta is done, add it to the skillet along with 1 cup of the pasta water.

 

Simmer the pasta with the sauce for about 2 minutes, adding more pasta water if needed.

 

Add the shrimp and chorizo back in to warm it up;

 

Season to taste with salt and pepper.  


Sprinkle the basil over the top and serve.  


It's a weekday, so feel free to bring the skillet to the table and if anyone at the table says you shouldn't serve grated cheese with seafood, please let them know that your Fishmonger has a special "I don't know what I'm talking about" sleeper hug for them. 


Quick Pan Roasted Dijon Garlic Halibut Serves 4
We all know you have no time to cook these days but your steady diet of Chinese and Pizza take-out has not only you but your loved one's gentle digestion tied into Sailors knots that can only be undone by a one legged pirate.  Nothing against Pirates but they do tend to leave the guest room a mess... I'm just saying.

 
Ingredients
For the Halibut
4-Halibut fillets 6 to 8 ounces each with the skin removed
2 cloves of garlic minced
1 teaspoon of finely grated lemon zest
1 tablespoon of Dijon mustard
2 tablespoons of olive oil divided
2 teaspoons of Soy sauce
A couple of dashes of your favorite hot sauce
1 teaspoon of dried Herbes de Provence
Salt and Pepper
2 tablespoons of Dry white wine
Lemon wedges for serving


How it's done
Preheat your oven to 425° degrees.


Place the Halibut fillets in a pie plate or rimmed dish.


Next, in a small bowl combine the garlic, lemon zest, mustard, 1 tablespoon of the olive oil, soy sauce, hot sauce and Herbes de Provence.


Pour the mixture over the fish and turn to coat well.


Heat a large non-stick oven proof skillet over medium high heat with the remaining olive oil.  


Season both sides of the fillet with salt and pepper.  

 

When the oil is just starting to smoke, sear the fish, flesh side down first for 2 to 3 minutes.  

 

Flip and cook for another minute or two.


Next add the wine to the skillet and place in the oven to roast for 6 to 8 minutes or until the fish is just opaque when fork tested. 


To serve, transfer the fillets to a warm platter and garnish with lemon wedges knowing full well that your love plumber's work is done and with a simple green salad so is dinner.
