Good morning to all of our beloved friends and clients and thankfully with the break in the weather, the "hunters" of the world's seafood have once again bestowed upon us a true treasure with their catches.
I am always humbled by those whose chosen occupation is to fish for a living and am eternally grateful for their amazing efforts. Please know that the premium costs of truly fresh Seafood is something we are acutely aware of. That said, for the past 29 years we have only sought the very best for our friends and clients and although it sounds like a perfect "sound bite", it is in fact completely true.
Case in point, earlier this week with winter fishing being inherently difficult, many Sword fishermen could not brave the windy conditions to do their jobs. This resulted in mostly substandard import fish in the market. Now when we select Swordfish for our store, we first look for pristine freshness and secondly a fatty fish which as many of you know, makes a perfectly delectable meal. Yet, despite the fact that we are so used to getting "everything" we want at a click of a mouse, there was no Swordfish that met our criteria hence, we did not have any Swordfish to sell. By the way, that's okay with us and further reaffirms our belief that, if it's not Fabulous, it's not coming home with us. A motto I thought I would implement in my dating life when I was much younger. But instead had no use for it, since I was married at the age of 23.
Secondly, we must face the facts that farmed fish is going to continue to play a larger role in the world's seafood consumption but as you might suspect, not all farmed fish are equal. That is why we go to great lengths to procure fish from farms that not only practice sustainable methods but refuse to use hormones or antibiotics to raise their fish. And let's not forget, that as a Fresh Fish Market we do not have the luxury of covering our fresh fish with sauces or numerous cooking techniques. No, unlike your half Lebanese fishmonger, our fish has to look spectacular naked, for all the world to see.
We are so very grateful to all of you who make a special trip to Metro but we sincerely believe that you came to get the very best Seafood the world has to offer and not something that is just okay. I reserve "just okay" to when my barber asks me how my hair looks and with great disappointment come to the realization that he's only made my hairless crown more evident. Another truth is that "Real" Seafood comes at a premium. That said, if you would like to purchase Red Grouper for example, you should be able to get the genuine article and not some Fish "relabeled" that is "kind of" like Grouper. Good news is that we also feature some amazing underutilized species like Pollack, Hake, Porgies and Whiting that are absolutely delicious and more moderately priced. But again our commitment to all of you lovely folks will always remain the same, Procure the Finest Seafood the World has to offer for the most Amazing Clients in the World.

Whole Roasted Sriracha Sea Bass Serves 4 It's time to slip out of our favorite Mediterranean Culinary Sweater of comfort and don the Asian flavors of the future little chef. No, I'm not suggesting you wear Yoga pants in the kitchen, just a tailored tunic...you know you'd rock that look.
Ingredients 2-2 pound Whole Sea Bass scaled and gutted; you could also use Branzino or Red Snapper Salt and Pepper 6 tablespoons of Olive oil 2 to 3 tablespoons of Sriracha Hot Sauce 1 tablespoon of Soy Sauce 4 cloves of garlic crushed and minced Lime wedges for garnish 4 tablespoons of fresh chopped Cilantro for garnish
How it's done Preheat your oven to 400° degrees
In a small bowl combine the olive oil, Sriracha, soy sauce and garlic with a good dash of salt and pepper.
Dry the fish well with paper towels and Place the Sea Bass in a baking dish suitable for the table.
Next, slather the spice mixture both inside and out of the fish.
Let the fish marinate at room temperature for 30 minutes on the counter.
Give the fish another turn or two to coat well and sprinkle with a little more salt and pepper.
Then place your Sea Bass in the oven and roast for 30 minutes or until the fish is just opaque and pulls off the bone when fork tested.
To serve, bring the baking dish to the table and sprinkle the fish with the chopped cilantro and garnish with the lime wedges. I know what you are thinking; "Can I rock this tunic at work tomorrow?" Short answer, hells yeah, now let's eat.
Garlic Sriracha Shrimp with Mint Serves 4 Ring... Ring... Ring... "Hello" "Hi, it's Spicy Lively Flavor, would you like to come to a party this weekend?" "Well, I don't know, will I know anyone there?" "I hope not, isn't that the point" "In that case, looking forward to some new flavors, if you know what I mean" "I don't but you are still invited anyway" Okay, enough of that, lets cook.
Ingredients 1½ to 2 pounds of Large Shrimp peeled and deveined with the tails left on (this will slow them down) 3 tablespoons Grapeseed oil (you can also use Canola or Vegetable oil) 6 cloves of garlic, minced 2 tablespoons soy sauce 4 tablespoons water 2 or more tablespoons Sriracha hot sauce ½ cup of fresh chopped mint leaves ¼ cup of fresh chopped cilantro The juice of 1 lime Lime wedges for garnish
How it's done Place the shrimp in a shallow bowl or pie plate and season with a little salt and pepper.
Heat a large non-stick skillet over high heat.
Add the oil and after the oil is hot, carefully add the shrimp (try to keep in one layer) and sear the shrimp for about 1 minute per side.
Next, lower the heat to medium and add the garlic, soy sauce, water, and Sriracha to the skillet and cook for 1 minute or until the sauce is heated through and the shrimp are just opaque when knife tested.
Transfer the shrimp to a large serving platter and garnish with the mint and cilantro (toss gently with tongs).
Finally squeeze over the fresh lime juice and garnish with the lime wedges.
By the way, the Spicy Lively party is at your house so make sure you're stocked up on wasabi peas.
