
Good morning to all of our beloved friends and clients and at last, Super Bowl LII (52) is just days away.
I know what you are thinking; I've been reading your emails for the last 5 years fishman and there is no way you are that jazzed about the game... In fact, if I remember correctly and I'm not saying this as an insult, aren't you a Jets fan?
To that I bravely say you are correct and I do not take it as an insult, I am a Jets fan (allow me to take this moment to remind you that we are in a no-judge space). Full disclosure, any interests I might have out of the world of Fish mongering is purely rooted in the food culture that revolves around it. Don't get me wrong, I wasn't always aware of this but looking back to my first Yankee game I can't honestly tell you if they won or lost or for that matter who they played against but I can vividly remember what I ate; 1 hotdog with kraut and mustard, a box of Cracker Jacks (the surprise was a tattoo that was of a Octopus with a Sailors hat), a cotton candy and a half a bag of peanuts.
The truth is that I would have finished the whole bag but I dropped them on the ground, Okay, I ate a couple of them off the ground. Come to think of it if you name any major sporting event the only things that come to mind is food, Kentucky Derby; Mint Julip, The Americas Cup; the Bermuda Fish Sandwich, The Masters; Pimento Cheese. I am sure some of you reading this would say, this sound like a problem dude. Or is it an opportunity to turn an otherwise boring "game" into a culinary bonding session for mankind.
I like the sound and sentiment of the latter. Which brings us back to the Super Bowl and this year's game which I couldn't care less about even if I tried, "Give me second I'm trying to care less, nope , still don't care at the same level." However, what I do care about is the Fabulous Food that will help bring together humanity as we cheer on this battle of modern-day gladiators. Where do I begin...Hello, Metro's Famous Chipotle Wings or perhaps you will find comradery with our Buffalo Shrimp. And nothing brings the crowd together like dipping into the same Hot Crab Dip (this is zone where opposing team fans find understanding and compassion for each other). If you want my prediction for the over under for this Sunday's game then I will give it to you, I predict that most of the fans will be hovering "Over" your Shrimp, Stuffed Clam and Nachos platter and if they do it right, will be feeling "Under" the weather Monday morning.

Today's Featured Recipes Created With Love for You...
Stuffed Chorizo Clams Serves 6 to 8 for appetizers
Clams and sausage are nothing short of culinary perfection. That said if you are a fan of the Spanish Dance, the Flamenco, get ready to have your tongue moving to its delectably rhythmic beat.
Ingredients
24 little neck clams shucked on the half shell...this job will be lovingly performed by your Metro Seafood Specialist
2 tablespoons of olive oil plus a little more if needed
1 link of Fresh Cooked Chorizo Sausage; Yes, Metro has this.
1 small shallot minced
2 cloves garlic minced
¾ cup of panko bread crumbs
½ cup of Romano cheese
½ cup of fresh chopped flat leaf parsley
Lemon wedges for serving
How it's done
Place you half-shell clams on a baking pan and preheat the oven to 450° degrees.
In a small skillet, heat the olive oil over medium heat.
When the oil is hot, sauté the chorizo to render some of the fat and release the gorgeous paprika color.
Add the shallots and garlic to the skillet and cook until tender about 2 minutes.
Turn the skillet to low heat and stir in the panko bread crumbs, allowing them to absorb the oils.
Remove the skillet from the heat and stir in the Romano cheese and parsley; season to taste with salt and pepper (you might not need any because the grated cheese and fresh clams are naturally salty). If your mixture is a little dry just add a little extra olive oil.
Next, spoon the stuffing mixture on top of each clam.
Place the clams in the oven and bake for 10 to 12 minutes or until golden.
Should you decide to enhance your flavorful experience with authentic Spanish music, may I suggest you create a Flamenco station on Pandora... I personally am a major Paco Pena fan.
Pan Seared Mediterranean Shrimp over an Israeli Salad Serves 4
Sure "Comfort Food" seems logical in the dead of Winter but I'll tell you what isn't comfortable, your favorite jeans as they cut into your waistline. Let's continue our comfortable habit of delectable clean eating with this easy complete weeknight meal.
Ingredients
For the Shrimp
1½ to 2 pounds of large shrimp cleaned and deveined with the tails removed
¼ cup olive oil plus a little more for cooking
The juice and finely grated zest of 1 lemon, like that free lemon you just got from Metro
1 tablespoon Lebneh or Greek style yogurt
3 cloves of garlic minced fine
2 teaspoons of dried oregano
¼ teaspoon each of Salt and Pepper
For the Israeli Salad
½ of a large seedless cucumber (not peeled) ½ inch dice
3 Plum (Roma) tomatoes ½ inch dice
½ a small red onion small dice
½ cup of fresh chopped curly or flat leaf parsley
2 tablespoons of olive oil
The juice of 1 lemon or more to taste
Salt and pepper to taste (I use white pepper but you rule your own kitchen)
How it's done
First place the shrimp in a glass bowl and add the olive oil, lemon juice, lemon zest, Lebneh, garlic, oregano, salt and pepper; toss to coat, cover with plastic wrap and let marinate on the counter while you make the salad.
Make the salad by combining all of the ingredients in a salad bowl and season to taste with salt and pepper; set aside.
Heat a large non-stick skillet over medium high heat until very hot.
Drizzle a little olive oil into the skillet and sear the shrimp (in batches if necessary) for 2 minutes per side or until just opaque when knife tested.
To serve, transfer the Salad to a large serving platter and place the shrimp on top of the salad and feel your jeans breathe a sigh of comfortable relief.
