Good morning to all of our beloved friends and clients and with all the Grads and Dads you have to get gifts for, you might find yourself creatively drained when it comes to "finding that perfect gift."

 

It can be taxing to find the right present for the newly minted Grad in your life, I mean really what can you give them to sum up your sentiments. I for one would like to give them a bag of tears embroidered with "Free Refills" and a card that says "If this Bag ever dries up you are probably dead, welcome to the real world buttercup." I even heard of some parents gifting their child a Boot accompanied with a card that reads "Don't Let the Door Hit You Where God Split You." I guess that's their playful way of saying it's time to fly the nest Junior. 


And as far as Dads go, of course you can't get them what they really want, which is a debaucherous weekend in Vegas, so you are forced to give them the obligatory "#1 Dad Barbecue Apron." But alas, a perfect gift is just a mouse click away. No, I'm not talking about a subscription for the "Nut of the Month Club" but a gift where one size fits all and is always in good taste. Grilled Halibut over a Zucchini Arugula Salad Serves 4
You just signed up for your first "Hot Yoga" class and although you want to go knees deep in a large calzone you know you must try to eat clean or that Yoga class can turn into a Hot Mess. Can Healthy and Delicious live in harmony? Uh Yeah! And I have the recipe to prove it.


Ingredients
For the Halibut

4 Halibut fillets 6 to 8 ounces each with the skin removed
Salt and Pepper
Olive oil for brushing the fish


For the Salad
1 tablespoon Capers rinsed drained and roughly chopped
1 large or 2 small shallots chopped
The juice of 1 lemon
1 teaspoon of finely grated lemon zest
2 teaspoons of White Wine Vinegar
3 tablespoons of olive oil
1 large or 2 small Zucchini sliced paper thin long ways on your mandoline (Note: I have also made this salad using my spiralizer with great results)
3 ounces of Baby Arugula
1 cup of Grape Tomatoes halved


How it's done
Place the halibut fillets on a plate and season generously with salt and pepper; gently brush with olive oil and let sit at room temperature while you prepare the salad.


Preheat your grill to medium high heat.


To make the salad dressing, combine capers, shallot, lemon zest and juice and white wine vinegar in a small bowl. While whisking, slowly pour in 3 tablespoons of olive oil until emulsified; Season to taste with salt and pepper and set aside.


When your barbecue is hot, grill the fillets, flesh side down first, for about 5 to 6 minutes per side or until just opaque when fork tested.

 

Meanwhile, combine the salad ingredients in a large bowl and toss with half the salad dressing.


To serve, divide the salad among four plates and place a halibut fillet on top of each dish.


Drizzle over the remaining salad dressing and get ready to send out the invitations for the wedding of the Season; Ms. Healthy and Mr. Delicious are getting married. Please know the open bar will be serving Grey Goose Wheat Grass Martinis...count me in.


Barbecued Spicy Middle Eastern Inspired Mahi Serves 4
This recipe is for those among us who suffer from Freaky Flavor Syndrome. FFS is not curable but can be controlled with regularly scheduled meals that pack a flavor punch in every bite. FFS sufferers should feel no shame but should remove all people in their lives who think ketchup is spicy.


Ingredients
4 Mahi Fillets 6 to 8 ounces each, skin removed: This would also be great with Tilefish or Grouper fillets
Lemon wedges for serving


For the Marinade
3 tablespoons of Lebneh Greek style yogurt; Metro carries the Lebneh of course
3 tablespoons of Harissa paste; found at all Camel filling stations and Metro Seafood
2 teaspoons of finely grated ginger
2 cloves of garlic crushed and finely minced
1 teaspoon of ground cumin
2 tablespoons of fresh chopped mint
2 tablespoons of olive oil

 

How it's done
In a shallow bowl whisk together all of the marinade ingredients with a good pinch of salt and pepper.


Place the Mahi fillets in the bowl and gently massage the marinade into the fish; cover with plastic wrap and let marinate on the counter for 30 minutes.


Heat your gas grill or grill pan to medium high heat.


When the grates are hot and lightly oiled, grill the Mahi fillets, flesh side down first, for 4 to 5 minutes per side or until just opaque when fork tested. 


To serve, transfer the fillets to a large serving platter and garnish with lemon wedges and torn mint leaves. 


And for the record I tried the FFS 12 step program and not only failed miserably but it's where I got my first taste of Pickled Jalapeño Peppers...and yes, they are Freaking Delicious as well.
