It's Never Appropriate to Wear a Speedo Poolside

Good morning to all of our beloved friends and clients and with July 4th just a week away I think it is time to update our do's and don'ts for this year's holiday festivities.

 

Okay, I know what you are thinking, who in the Hake fillet are you fishman to tell me what not to do? Pump the brakes my fellow traveler, we are all still in a "Judge Free" zone were empathy and understanding are the rule of law but I'm just throwing a few pearls on the ground as to enhance your Independence Shindigs. Okay, please keep in mind these are just guidelines and are open to interpretation.


1) Do not drive to Pennsylvania with an open container to buy your loot of fireworks. Come to think of it, have you ever really enjoyed a "Home Made" fireworks show? To me it's like going to a Flea market, once I'm there I'm just reminded how much crap I have in my life.


2) And this one is for the Men, should you be invited to a July 4th pool party it is never appropriate to wear a speedo poolside. Unless of course you are from Canada and then anything goes.


3) Unless you like cleaning up your dog's un-chewed treats, do not set off firecrackers in your own yard. It's not worth the cleanup and as everyone knows sparklers set the mood just as well.


4) Grill everything on the forth, nothing expresses your Independence from those tyrannical English like Fresh Seafood on the Barbecue. Heck if I could find a way to flame kiss rice pudding, I would be there.


5) Bringing a bag of chips is not the appropriate gift to give if you are invited to a party. Clams on the other hand are the "Party Starter" according to Emily Post.


6) And finally, take the time to slow things down and not only feast on some great food but truly devour your friends and family that love you so dearly.

Today's Featured Recipes Created With Love for You...


Bang, Bang Banging Firecracker Shrimp Skewers Serves 4
What better way to express your flavor forward independence then this Spicy Shrimp Declaration. "♫And the Grill Grates Red Glare the flavors bursting with little chef flare...♫" You know the words, sing along!


Ingredients
1½ to 2 pounds of large shrimp peeled and deveined with the tails left on...you know why...because you're fancy...yes you are
Wooden skewers soaked in water for 30 minutes.


For the Marinade
The juice of 2 limes
The finely grated zest of 1 lime
2 tablespoons of Dijon Mustard
1 teaspoon of smoked Paprika
1 chipotle in Adobo pepper minced very fine (I use 2 peppers because I am a flavor freak)
1 tablespoon of Chipotle and adobo sauce (it's the sauce that's in the can with the peppers)
1 tablespoon of honey
2 tablespoons of olive oil
Salt and Pepper


How it's done
In a large bowl whisk together all of the marinade ingredients and season to taste with salt and pepper. Add the shrimp and toss to coat well; cover with plastic wrap and let marinate in the refrigerator for 20 to 30 minutes.
Preheat your gas grill to high heat.


Thread the shrimp onto the wooden skewers and grill the skewers for 2 minutes flip and cook for another 3 minutes or until they are just opaque when fork tested.


Transfer the skewers to a large serving platter and garnish with the lime wedges and should you think that wearing a powdered wig would help express your new found independence then, you are right.


Pan Grilled Branzino Fillet with a Mint Pesto Serves 4
If any of you have ever made the mistake and I have, of planting mint in your yard then it is about this time in the season that this lovely Monster Plant has taken over your property. But I will not kill it, instead I will beat this beast the best way I know how to deal with life, I'm going to eat it all. Won't you please join me in my culinary attack?


Ingredients
4 fillets of Branzino 6 to 8 ounces each skin on and scaled: you could also use with great success Grouper, Black Fish or Red Snapper fillet
2 tablespoons of olive oil
Salt and Pepper


For the Mint Pesto
½ cup packed fresh mint leaves
½ cup toasted Walnuts or Pine Nuts (Note: toast nuts in a dry non-stick pan over medium heat until fragrant and lightly toasty in color)
1 small shallot chopped
½ cup olive oil
The juice of 1 lemon
Salt and Pepper


How it's done
To make the pesto, combine the mint, walnuts, and shallot in a food processor and "whizz" until finely ground. With the machine running, gradually add the oil. 


Add the lemon juice and "whizz" again, and then season to taste with salt and pepper and set aside.


Next pat the fish fillets dry with paper towels and brush both sides with olive oil; season both sides with salt and pepper and let rest on the counter for 10 to 15 minutes.


Heat a large grill pan over a medium high heat and when the pan is hot, grill the Branzino, flesh side down first, for 3 to 4 minutes per side or until just opaque when fork tested. To serve, transfer the fillets to four plates and spoon the Mint Pesto over the fish.
