Good morning to all of our beloved friends and clients and I would like to thank you from the bottom of my heart for allowing us to celebrate our 30th ANNIVERSARY.


Holy Ship Bottom is right...In 1988 a Half-Lebanese Fishmonger traveled west to make a life for him and his wife and to raise a family in Hunterdon County NJ. My friends and family collectively said I was out of my mind and suggested that if I were going to move that far out west, I should consider a trade in blacksmithing to "shoe" the town's horses. But all kidding aside our first store was no more than 450 square feet and we only carried fish, cocktail sauce, horseradish and tartar sauce...seriously that was it, we had no prepared foods or any other gourmet products as we have today. I can sincerely remember it like it was yesterday when my first client came in, I was so excited I could barely contain myself...before he was even in front of me I bellowed out "Welcome to Metropolitan Seafood, Hi my name is" but before I could finish he quickly said "Sure, do have any Cod?" Honestly, my knife was so sharp (I spent the night before honing my blade to a straight up razor) I almost cut off my thumb, thankfully, I didn't. 

But that said, I must acknowledge some very special people in my life who, without their support, I would not have made it. To my devoted wife, thank you for your confidence and trust and allowing me to take a chance on a longshot. To my staff, both those who have been with me well over 20 years and my new hires, thank you for taking such great care of our clients and helping me achieve my goals to have one of the finest Seafood markets in the Tri-State area (Please know that we continue to strive for this lofting goal every day). And to my clients who have trusted us to feed their families and graciously allowed us to help celebrate their milestones, thank you, thank you, thank you. Of course, there are so many other people who have allowed us to make it to 30 years and I apologize that I do not have time to name them all but please know that I am forever indebted for your patronage and extreme kindness.  And lastly, please know that we will never stop trying to deliver to our clients the Finest Seafood the world's oceans has to offer with caring and sincere customer service you all greatly deserve.

Seared Grouper with a Fresh Tomato Salsa
This recipe will have you on your way to beach sexiness in no time. This is a perfect storm of flavor and unsaturated fat that will no doubt have your body craving long walks to complement your new sense of deliciousness. Serves 4 

3 tbsp extra virgin olive oil
8 ripe plum tomatoes, de-seeded and cut into strips
8 scallions finely chopped
½ inch piece of ginger, peeled and grated
Finely grated zest and juice of 2 limes
¾ bunch of cilantro, chopped, plus extra leaves to garnish
4 portions of Grouper 6 to 8 ounces each: you can also use Snapper, Halibut, Salmon, or even Jumbo Shrimp

How it's done
Heat 2 tablespoons of olive oil in a medium-large frying pan over a medium heat. Add the tomatoes and scallions, and cook for about 2 minutes for them to soften.

Add the ginger, lime zest, lime juice and cilantro, and season with salt and pepper. Remove from the heat. 

Season both sides of the fish with salt and pepper.

Heat a separate large frying pan over a high heat and once it is very hot, add a tablespoon of olive oil.

Place fish fillet in pan and sear for about 3 minutes achieving a golden brown crust. Turn over in the order that you placed them into the pan and sear for another 3 to 4 minutes.

Remove fish and transfer to 4 plates and serve with salsa and extra cilantro leaves. 

If you can conjure up an excuse of difficulty to not prepare this dish I applaud your resolve and commitment to the sloth like existence. Good night quiet slow mover.

Oven Roasted Cod with Olive Panko Crust Serves 4
The only way this dish could take any less effort is to have a large mother bird at home to prepare this meal than eat it and while you're chirping loudly at the table, regurgitate it into your quivering beak. Oh sorry for the visual, that one made me sick.

3/4 cup panko bread crumbs...available at Metro
1/3 cup finely chopped Kalamata olive...Metro has that too? Yep.
1 clove garlic, finely chopped
1 tablespoon chopped fresh flat-leaf parsley
1 teaspoon grated lemon zest
Salt and fresh ground black pepper
1/4 cup olive oil
1 ½ to 2 pounds of Cod fillet.  You can also use Red Snapper, Grouper, Maine Sea Bass, Hake or Pollack

How it's done
Place a rack in the center of the oven. Preheat the oven to 450°F. Oil a large baking pan.

Put the panko, olives, garlic, parsley, lemon zest, a pinch of salt, and black pepper to taste in a bowl. 

Add the olive oil and stir well. 

Arrange the fish in the pan in a single layer flesh side up. 

Pile the crumbs on top of the fillets.

Bake 10 to 12 minutes, depending on the thickness of the fish, or until the crumbs are golden and the fish is just barely opaque when cut in the thickest part. 

Serve immediately and be careful not to fall out of the nest until you're ready.
