Tenth Avenue Freeze Out

Good morning to all of our beloved friends and clients and thankfully we made it through this past Winter "Freeze Out."


I know what you're thinking, I love Springsteen's "Tenth Avenue Freeze Out" It is great song and I agree. But I would be shirking my duties as a Fishmonger if I did not tip my cap to the fantastically insane folks who hunt the waters of the world to bring us such amazing seafood.

Seriously, even with electric socks and underwear there is no way in #@!! I would get on a boat when the mercury is at 7° degrees. Heck, my tire pressure light went off on the dash of my truck the other morning and instead of filling the tires I just stuck a piece of gum over the light...problem solved and this half-Lebanese Fishmonger remained "biscuit in the oven" toasty. And while I know I have said it a million times we must always recognize, especially this time of year, that Fish is the last hunted food source on earth. Even, farmed items like Oysters can be affected this time of year. Case, in point, one of my beloved clients asked for their favorite Canadian Oyster, to which I replied, unfortunately the Bay is frozen over at this time. I swear to Cod this gentlemen gave me the most confused look like I just told him that most cardiologists recommend four servings of bacon a week to promote heart health. And to be frank, some of these inspired (and I say this with Love) kooks actually try to break through the ice in the attempt to harvest. Not only are these guys taking the chance of freezing their New Zealand cockles off but for the love of salted


cod, endangering their own lives...that is a level of dedication that truly inspires me to be the best fishmonger I can be and to always honor every species of seafood taken from the water. I apologize if I went off on a bit of a tangent but I just wanted to remind you that should you ever have the honor of meeting one of these folks be sure to give them a hearty hug of gratitude for their tireless efforts. 

Truth be told, as a Fishmonger I am contractually obligated to not only fully embrace any commercial fishermen but offer them a place to rest. It's always awkward when back at my house they give me the "come over here tiger" stare as they lay on my couch but hey, it's the least I could do and at least it's warm on the couch. Roasted Chipotle Lime Shrimp Appetizers Serves 6 to 8 for appetizers
Hello Sweet Heat...Now should you not like things spicy then this dish is not for you. That said, for the rest of us, this could not be an easier dish to make...the only thing that could make it easier is if I made it for you and playfully fed them to you while gently rubbing your brow and fetching you more Cold Cerveza. I would do this for you but you might want to ask the other 6 folks to leave...meow.

2 pounds of large shrimp cleaned and deveined with the tails left on: This service is free of Charge at all Metro locations, including our only one in Lebanon
3 Chipotle Peppers in Adobo with 1 tablespoon of the sauce
The juice of 2 large limes...3 if they are small
½ cup of honey
¼ cup of olive oil plus more for brushing the pan
½ cup of roughly chopped fresh Cilantro
Lime wedges to serve

How it's done
Preheat your oven to 500° degrees

Line a rimmed baking tray with foil and brush generously with olive oil and set aside

Next, in a blender or small food processor combine the Chipotle peppers, honey, ¼ cup of olive oil and lime juice and process until smooth.

Place the shrimp in a bowl and season with salt, pour in the chipotle marinade and toss well to combine. Let marinate for 10 to 15 minutes on the counter.

Place the shrimp on the oiled baking pan and place in the oven and roast for 10 to 12 minutes or until the shrimp is just opaque when knife tested.

To serve, transfer the shrimp to a large serving platter and scatter over the cilantro. Garnish with lime wedges and get ready to punch Buffalo Wings right in the mouth.

This is a fantastic appetizer anytime people are over and even when they are not but you just need a spicy hug of thankfulness.

Steamed Clams with a Spicy Tomato Sauce and Garlic Pesto Bread Serves 6 for a starter or 4 as a playful Saturday night feast

Okay, you're having a few folks over for the weekend and you want them to feel the full force of your love. I get it but does Ruffles Potato Chips and Onion Dip really express those emotions? I dare say, hell no. Now when you bring Clams into the equation you might as well tell them that not only are you welcome but if you need a kidney, put me on the top of the list.

For the Garlic Pesto Bread
1 crusty Baguette
4 tablespoons of unsalted butter softened
2 cloves of garlic crushed and minced fine
2 tablespoons of your favorite pesto; Metro makes one that is "kickbass"

For the Clams
4 dozen Little Neck clams washed well and soaked in cold water for 20 to 30 minutes: Change water at least once.
4 tablespoons of olive oil
2 cloves of garlic crushed
1 large or 2 small shallots sliced thin
1 really good pinch of crushed red pepper flakes
1 teaspoon of smoked paprika
1-14 ounce can of peeled baby plum tomatoes, crushed with your little chef hands; Yes, Metro has these
1 cup of clam juice
½ cup of fresh chopped flat leaf parsley

How it's done
Preheat grill or oven to 400° degrees

In a small bowl combine the butter, garlic and pesto.

Cut the bread in half long ways without cutting through all the way.


Spread the pesto butter onto the bread and wrap with foil; bake for 10 minutes in the oven. (to serve, cut the bread into thick slices)

Meanwhile heat the olive oil over a medium-high heat in a large saucepan.


Add the garlic, shallots and crushed red pepper flakes and cook for 2 to 3 minutes.


Stir in the smoked paprika and cook for 1 minute more.

To the sauce pan, add the tomatoes, clam juice and a good pinch of salt and pepper and bring to a boil.

Next add the clams to the sauce. Cover and cook, shaking pan occasionally, for 6 to 7 minutes or until the clams open. Discard any clams that have not opened.


To serve, turn the pan out into a large bowl and sprinkle over the chopped parsley and serve with the pesto garlic bread.

If you see anyone whimpering while eating, don't be alarmed they just are dealing with the full force of your culinary love.
