3 Weeks Until Spring

Good morning to all of our beloved friends and clients and I don't know about you, but with about 3 weeks until spring this Half-Lebanese is looking a little puffy.

By the way, we're not talking about the cute puffy like a Pomeranian Puppy...Damn, those dogs are adorable. No, I'm more like a full sprained ankle puffy, complete with a lightly bruised midsection. This past Superbowl weekend was no help either regarding eating choices. Sure, started with healthy decisions and then it happened...Yep, a homemade Onion Dip got me. Please, let me explain, I'm not talking about someone cracking open a can of onion "flavored" dip that has the consistency of Spackle, I'm talking about sweet onions caramelized in a skillet until they are so sweet your tooth hurts and then blended with an ample amount of sour cream...oh my, it was glorious. I went in up to my waist with no regards for my fellow party goers. I was asked politely by my hostess if I intend on sharing, to which I replied sternly, "Back off #!*@% this dip is mine"...not my proudest moment but hey, dip happens. Well today is a new day and the holiday of Love is a little more than a week away so I guess I'll just start things a little early with some self-love regarding my culinary choices.

TODAY'S FEATURED RECIPES

Sautéed Cod with Zucchini and Tomatoes Serves 4 It's about this time in the Winter season that, if you're like me, your jeans have fired off an email to your body stating. "Dear Body, just wondering, with Spring about 3 weeks away do you think you can either go into your closet and find the "fat" jeans or at least drop a few pounds...our denim fibers are being stretched to capacity."

I know, those jeans are mean but alas, a healthy recipe to get you back on track.

Ingredients 4 Cod Fillets 6 to 8 ounces each: You could use Hake or skinless Halibut with great success Salt and Pepper 2 tablespoons of olive oil divided 3 cloves of garlic crushed and chopped 1½ pounds of zucchini, cut into half-moon shapes 1½ cups of grape tomatoes halved ¼ cup of fresh chopped Basil

How it's done Season the Cod fillets on both sides with salt and pepper. In a large non-stick skillet, heat 1 tablespoon olive oil over medium high heat. When the oil is hot, add the Cod fillets, flesh side down first, and cook over until they are browned, about 3 minutes per side or until just opaque when fork tested.

Transfer the fish to a warm platter and tent with foil to keep warm.

Add the remaining olive oil to the skillet and cook the garlic for 1 minute or until fragrant.

Add the Zucchini to the skillet and sauté for about 2 to 3 minutes.

Season the Zucchini with salt and pepper and add the tomatoes to the skillet.

Increase the heat to high and cook the tomatoes for about 2 to 3 minutes or until they begin to just breakdown; adjust seasoning if necessary.

To serve, spoon the Zucchini mixture around and on top of the cod fillets. Garnish with the basil and lemon wedges and should your jeans not send a thank you reply to the email, threaten them with an extra hour in the dryer.

Rosemary Garlic Roasted Mahi Serves 4 If you are looking to spend 2 hours or more in the kitchen on a weekday, this is not the recipe for you. However, if you want to make dinner in less time than it takes to order take-out and deliver your family a delectably healthy dinner, this is the dish for you. A simple salad and a loaf of bread rounds this flavorful dish out to a complete meal.

Ingredients 4 Mahi Fillets 6 to 8 ounces each with the skin removed 4 tablespoons of Olive oil 3 cloves of garlic sliced thin 2 tablespoons of roughly chopped Rosemary leaves The finely grated zest of the free Lemon you just got from Metro 1 teaspoon of smoked Paprika Salt and Pepper ¼ cup of dry white wine The juice of 1 free lemon (the one you just zested) Lemon slices for garnish

How it's done Preheat your oven to 450° degrees.

In a rimmed aluminum baking pan combine the garlic, olive oil, rosemary, lemon zest and smoked paprika with a good pinch of salt and pepper.

Add the Mahi fillets to the pan and toss with all of the ingredients until the fish is well coated (allow the fish to come to room temperature while the oven is preheating).

Pour the white wine into the pan and lace the fish in the oven and roast for 15 to 18 minutes or until the fish is just opaque when fork tested.

To serve, transfer the fillets to a serving platter and pour over the lemon juice and any pan juices (Pan Juice was also my Rap Name in the early 90's).

Garnish with lemon wedges and a few rosemary sprigs and don't be surprised when your tummy thanks you for not ordering Pizza again.

Me personally, my third chin was pretty upset when I didn't order the Pizza.
