Good morning to all of our beloved friends and clients and I sincerely hope that you and your families are safe and healthy during these trying times.
Many of you have been emailing there kind words regarding the health and well-being of our staff and for that, I thank you sincerely. Thankfully, we can report that everyone is safe and sound within our Metro family and are eager to serve our beloved community in this time of need. That said, I would like to reassure all of you that we continue to take the utmost precaution to keep you and our employees safe during these times with continuous sanitizing measures prescribed by the CDC and observing all social distancing guidelines in the hopes of curtailing the spread of the Coronavirus. That said, thankfully the availability of fresh and healthy seafood is continuing to come into the market to feed our community. The Fulton Fish Market itself has been diligent in its cleaning practices and even has installed automatic hand sanitizing dispensers throughout the market. Having said this, please know that Metropolitan Seafood will continue to operate during our regular business hours (both Fresh Fish and Take-Out) and observing all curfews when issued. This is truly an amazing community that I have had the honor of serving for the past 31 years.
Our clients and neighbors never cease to inspire me with their acts of kindness and generosity and for this, I am eternally grateful. Now although we will continue to operate as normal as possible, we will be adding some extra services to protect our community and they are as follows.
1. To all of our elderly clientele and those with immune deficiency issues who wish to enjoy fresh seafood, please know, that we will immediately be offering free home delivery (this will only apply to fresh fish and grocery items, sorry this does not apply to take-out). To participate in this just please call your order in with your credit card information and we will take care of the rest.
2. For those of you who would like, we will now be offering curbside delivery. Again, please call in with your credit card information and when you pull up to the store just call and let us know that you are here and we will bring your fresh fish directly to your car.
3. We know that along with the obvious health issues some of you might be finding yourself in severe financial crisis during this time. Please do not hesitate to call the store or direct message us on Facebook or Instagram so we may provide a hot meal, free of charge, to those in need. This will be practiced with the utmost discretion maintaining complete privacy to all of those involved. You have plenty to worry about but we will have no one in our community go hungry tonight.
Please forgive my cliché when I say, I know we will get through this as the strong unified community we are. I can't wait for the day when I can greet my clientele with Real Fishmonger Hugs.

A Super Easy Honey Lemon Roasted Salmon Serves 4 Got no time to cook? Okay, that may be true but you did just spend the last 45 minutes checking out Jan's (your high school chum) Facebook page and wondering how in the hell she posted a picture of herself on vacation wearing a string bikini #brave. Now let's put down the phone and make those loved ones a gorgeous supper.
Ingredients 4 center-cut (ask your Metro Associate) Salmon fillets 6 to 8 ounces each with the skin left on but scaled Olive oil for brushing pan 4 tablespoons unsalted butter, softened 2 teaspoons of finely grated lemon zest The juice of 1 lemon 2 teaspoons honey 2 teaspoons of freshly chopped thyme leaves 2 small cloves of garlic minced fine Salt and Pepper Lemon wedges for serving; Thank Cod for the Metro Free Lemon Program
How it's done Line a baking pan with aluminum foil.
Brush the foil with a little oil and place the fillets, flesh side up, on the foil. In a small bowl, mix the softened butter with the lemon zest, lemon juice, honey, thyme and garlic.
Season to taste with salt and pepper.
Rub the butter mixture on top of the Salmon fillets and let sit at room temperature for about 15 to 20 minutes.
Preheat the oven to 425° degrees.
Place the fish in the oven and roast for 20 minutes or until the fish is just opaque when fork tested.
To serve, transfer the fish to large serving platter and drizzle with the pan juices. Garnish with lemon and stop Facebook stalking Jan and give her a call. She would not only love to hear from you but I'm sure she would gladly accept your invitation for a home cooked meal. #cookfishathome
Pan Roasted Lemon Butter Sablefish with a Baby Spinach Sauce Serves 4 Sometimes the daily grind can wear your precious little chef backside down to a mere shadow of its former glory. Let's bring your spiritual hindquarters back to its bouncy deliciousness with this easy one pan dish. Sure, you need a loaf of bread and a salad but so does most of life.
Ingredients 4 Sablefish fillets, 6 to 8 ounces each; scaled skin on 2 teaspoons of smoked paprika Salt and Pepper 3 tablespoons unsalted butter, divided 3 cloves of garlic minced very fine 1 cup fish or chicken stock; Metro has both so stop fretting oh "cheffy" one ¼ cup heavy cream ½ teaspoon of finely grated lemon zest The juice of 1 lemon 1 teaspoon dried thyme 2 cups baby spinach, roughly chopped
How it's done Preheat oven to 400° degrees
Pat the Black Cod fillet dry with some paper towel and season with the smoked paprika, salt and pepper.
Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat. Add the fish, flesh side down, and sear both sides until golden brown, about 1 to 2 minutes per side; transfer fillets to a plate.
Melt the remaining tablespoon butter in the skillet. Add garlic, and cook, stirring frequently, until fragrant, about 1 minute. Stir in fish stock, heavy cream, lemon juice, lemon zest and thyme.
Bring to a boil; reduce heat, stir in spinach, and simmer until the spinach has wilted and the sauce has slightly thickened, about 3-5 minutes; season the sauce to taste with salt and pepper or more lemon juice.
Return the Fish fillets back to the skillet and place the skillet in the oven; roast for 10 minutes or until the fish is just translucent when fork tested.
Don't be alarmed if you are getting more glances to your backside, it's just the price to pay for being a stone cold sexy little chef.
