Good morning to all of our beloved friends and clients and on behalf of the entire staff at Metropolitan Seafood & Gourmet, THANK YOU, THANK YOU, THANK YOU for your support.  


As we all go through these very difficult times I am reminded of the story of "Stone Soup." Stone Soup is a European folk story in which hungry strangers convince the people of a town to each share a small amount of their food in order to make a meal that everyone enjoys, and exists as a moral regarding the value of sharing. In that spirit Metro is preparing today "The Soup of Human Kindness" This actual soup will be a Fresh Fish Chowder that we will prepare for all of our friends and clients to enjoy. The Chowder will be free of charge to all of you (note: please take some for those in need). Also, should you want to make a donation of $5 for a quart of this gorgeous elixir, 100% of the proceeds will go to our NJ State Police to help with the critical need of PPE for the men and women working tirelessly to mitigate the spread of the COVID-19 virus.

The equipment will be distributed to our essential medical and public safety personnel throughout the state. (NOTE THE FISH CHOWDER WILL BE READY BY 3:00 PM TODAY: PLEASE FEEL FREE TO CALL YOUR ORDER IN AND IF WE RUN OUT, WE WILL JUST MAKE MORE TOMORROW) And should anyone be willing to donate equipment such as masks, gloves, and eye protection is asked to please email ppedonations@njsp.org


In case some of you did not see our last couple of emails, please know that some of our procedures have changed to ensure the safety of us all, including limiting the number of clients allowed in the store at one time. The rest are as follows.

1  To all of our elderly clientele and those with immune deficiency issues who wish to enjoy fresh seafood, please know, that we will immediately be offering free home delivery (this will only apply to fresh fish and grocery items, sorry this does not apply to take-out).  To participate in this just please call your order in with your credit card information and we will take care of the rest.

For those of you who would like, we will now be offering curbside delivery.  Again, call in with your credit card information and when you arrive, please park your car. After that just call and let us know where you are in our parking lot and we will bring your fresh fish or take-out order directly to your car.

3  We know that along with the obvious health issues some of you might be finding yourself in severe financial crisis, due to layoffs during this time.  Please do not hesitate to call the store or direct message us on Facebook or Instagram so we may provide a hot meal, free of charge, to those in need.  This will be practiced with the utmost discretion maintaining complete privacy to all of those involved. You have plenty to worry about but we will have no one in our community go hungry tonight. 

Should you want to spend some culinary time together with those in your house may I humbly suggest a couple of recipes I have written including Dilled Shrimp and Spinach Soup & Roasted Flounder with Sicilian Olives and Salsa Cruda. Lastly, should you need anything that we do not normally offer in the store, please do not hesitate to ask (i.e. butter, eggs, virtual hugs etc.) so we may save you time and another trip to the store. Dilled Shrimp and Spinach Soup Serves 4 to 6; 8 as a first course
When the Weather Man tells you to brace for the cold day ahead it is your time to tell the cold day ahead "Hey, you better brace yourself from my kick@$$ Shrimp soup recipe." That's right cold, I'll be grabbing you by the collar and warmly roughing you up with my delectable kindness. Okay, enough of the violence let's cook.

4 tablespoons of olive oil divided
3 carrots diced
3 stalks of celery diced
½ medium white or yellow onion diced
3 cloves of garlic crushed and chopped fine
2 quarts of Fish Stock; do not panic, Metro makes this but if you want to make your own stock just ask for bones knowing it is our pleasure
1 ½ pounds of medium shrimp peeled and deveined
2 bay leaves
3 sprigs fresh thyme
Salt and Pepper
⅔ cup of Orzo pasta
4 cups packed fresh baby spinach
3 tablespoons of fresh chopped dill
The finely grated zest of 1 lemon
The juice of 1 lemon

How it's done
Heat 1 tablespoon of the olive oil in a large soup pot or Dutch oven, over medium-high heat. season the shrimp with salt and pepper and when the olive oil is hot, sauté the shrimp for about 2 minutes; with a slotted spoon remove the shrimp and transfer to a plate, cover with foil and set aside. 

Add the remaining olive oil to the pot and sauté the carrots, celery, onion, and garlic until onions are soft, 4 to 6 minutes. 

Add the stock, bay leaves, and thyme; season with salt and pepper. 

Cover and bring to a boil. Reduce heat and simmer for 20 to 25 minutes.

Discard bay leaves and thyme sprigs and stir the orzo pasta into pot and cook until tender, 8 to 10 minutes. Add spinach, dill, lemon zest, lemon juice, and cooked shrimp and season with salt and pepper to taste.

To serve, ladle into your dinner mates yearning soup bowls and for one added measure of delicious pain, tear them each a piece of crusty bread. Try not to let the sobs of cold ruin your lovely meal.

Roasted Flounder with Sicilian Olives and Salsa Cruda Serves 4
This recipe screams "I may not be Italian, but like Hollywood and the rest of the free world, I recognize your cultures underlying sexiness and unabashed zeal for deliciously salacious meals..." and it can be performed in under 30 minutes...Hello weekday meal.

For the Salsa Cruda
3 ounces olive oil
Juice and finely grated zest of 1 lemon
¼ cup chopped flat leafed parsley
¼ cup ripped up basil leaves
6 Plum (Roma) Tomatoes diced
1 clove garlic crushed and minced
1 good pinch of crushed red pepper flakes...if you like it less hot you might want to have a jar of baby food for dinner...Man Up!
Salt and pepper

For the Flounder
4 Flounder fillet 6 to 8 ounces each
4 tablespoons olive oil
1 cup Sicilian green olives pitted; Note you can use any olive you have on hand...you know Metro carries a full line of olives...wow, nice shameless plug...thank you.
Salt and pepper

How it's done
For the Salsa Cruda, combine all of the ingredients in a glass bowl and season to taste with salt and pepper and set aside.

Preheat the oven to 425° degrees

Brush the bottom of your baking dish with one tablespoon of the olive oil.

Place the fillets flesh side up in the pan and fold under the thinner tail section to achieve a uniform thickness to the fish. 

Season the fillets generously with salt and pepper and sprinkle the olives around the dish. 

Drizzle over the remaining olive oil and bake the fish for 15 to 18 minutes or until the fish is just opaque when fork tested.

To serve, transfer the fillets to a large serving platter and sprinkle the olives around the fish and spoon over some of the Salsa Cruda. This becomes a complete meal with a loaf of bread and a simple salad and perhaps an appreciative pat on the backside. No, it's not sexist when you are patting my backside...hey, less judging and more eating little chef.
