WHAT NOT TO EAT WHEN WEARING A MASK AND CURBSIDE ORDERING

Good morning to all of our beloved friends and clients and as we slog through our current state of affairs I am taking a great deal of solace of how many folks are handling these tumultuous times with extreme patience, resolute and heaping piles of human kindness. Heck I am even finding it soothing to hear PSAs from celebrities who remind me to wash my hands, stay home and observe social distancing...okay, I was fibbing about that last part, I really don't care what Danny DeVito has to say unless he's delivering stellar comedic lines on "Cheers" or "It's Always Sunny in Philadelphia"...seriously, this guy is an American Treasure. 


Now of course as your humble Funky Fishmonger, I would never offer any kind of warnings unless of course you are planning on grilling a whole Branzino. To that point, your grill should be set on medium high heat and the fish has to be at room temperature if you are going to pull this culinary assignment off without a hitch. But keeping with my level of expertise as a Fishmonger, I do have a couple of sound pieces of advise during this new and funky normal. For one as we are all wearing masks there are some precautions we all must take to insure the safety of others but also one's own comfort. Please keep in mind, I know absolutely nothing when it comes to masks, I just strap in on like most of you and trust it's doing its job. However, regarding your comfort, I have found that there are certain foods you might want to avoid when donning a mask. How do you know this Funky Fishmonger? Life experience my fellow travelers. Now I should preface this by saying that I am a fan of very flavorful cuisine but that doesn't always jive when wearing a mask. For example, we just cut into a brand new wheel of Blue Cheese yesterday and I eagerly took a sample and then promptly put my mask back on. Well, OH MY indeed...what normally was a lovely blue cheese funk turned into a full on Fromage attack on my olfactory. And as long as we are on the subject you should also avoid Herring in Wine Sauce, garlicky Hummus, Kimchi and of course Limburger and Blue cheese.

Curbside Service is still available for all orders both FRESH FISH and TAKE-OUT, we just please ask for your patience while we gather your order and safely deliver it to your vehicle.  Of course you can call in your order and we will give you a designated time frame in which to pick up your order. That said, we would love to tell you your order will be ready in 30 minutes or less but unfortunately we must schedule it for later in the day as we do butcher every piece of fish that is brought into Metro.


You may now order Fresh Seafood (Fresh Fish, Shrimp, Crab, Clams etc.) online with a minimum of 48 hours in advance.  Just Email us at  lobsterman@metroseafood.com and please put ORDER in the subject line. Please include your full name, the day you would like to pick-up (curbside) along with your phone number so we may call you back to confirm your order. We will call you to get your credit card information.  Please see the body of this email or check our website for current fresh fish availability. Since we cannot get back to you immediately please call the store for all current pricing.


Regarding Take-Out (Hot, prepared meals from our specials and regular menu); Things have changed slightly, we please ask you to call earlier in the day and place your order. We will then let you know what is the next pick-up time.  During our peak lunch and dinner hours we cannot always guarantee 30 minutes or less but I promise we will try.


We are still delivering (free of charge to those in our community who are at the greatest risk (the elderly as well as those with immune deficiencies). Please call at least 24 hours in advance so we can assist you better. Also, please know that our Curbside Service is completely safe and you never have to leave your car. Just pop the trunk and we will drop your order in.


Regarding phone calls; With only six phone lines it is not uncommon for all lines to be busy, PLEASE FEEL FREE TO LEAVE YOUR NAME AND NUMBER ON THE ANSWERING SERVICE AND WE WILL CALL YOU EARLY THE NEXT DAY


Also along with our fresh fish offerings, we also carry fresh produce (Asparagus, French String Beans, Salad Mix, Potatoes, Onions, Carrots and so much more). Moreover, we have a full line of Rice, Imported pasta, olive oil and vinegars so please do not hesitate to ask for anything at all as we would love to save you another trip to the store.


Seriously just ask, if we have it, you'll have it.


And lastly, We know that along with the obvious health issues some of you might be finding yourself in severe financial crisis, due to layoffs during this time. Please do not hesitate to call the store or direct message us on Facebook or Instagram so we may provide a hot meal, free of charge, to those in need. This will be practiced with the utmost discretion maintaining complete privacy to all of those involved. You have plenty to worry about but we will have no one in our community go hungry tonight.

TODAY'S FEATURED RECIPES 


Grilled Tilefish Avocado Salad Serves 4
Can healthy and delicious live together in the same house? Of course the can but just like all houses Healthy and Delicious have their own unique personalities. For example Bamboo shoots and Herring are delicious and healthy, if the house is owned by Panda Bears. That said, let's H&D together for this great spring time meal.


Ingredients
4 Tilefish fillets 6 to 8 ounces each with the skin on and scaled; Grouper works great Also
For the Tilefish Marinade
2 tablespoons o of olive oil
1 tablespoon of Seven Spice; don't panic, Metro has this addictive spice blend
2 cloves of garlic crushed and minced fine
Salt and pepper
For the Salad
2 ripe Avocados
6 tablespoons of Crème Fraiche
The juice of 1 to 2 limes depending on your taste.
Salt and Pepper
2 scallions sliced thin
8 radishes sliced thin
2-5 ounce boxes of Mixed Field Greens or your Favorite lettuce


How it's done
First make the avocado dressing by combining the Avocados, crème fraiche, and lime juice in a food processor and "whizz" until smooth; season with salt and pepper to taste and set aside (if your dressing is too thick you can add a little water to smooth it out).


Next combine the olive oil, seven spice, garlic with a good pinch of salt and pepper in a small shallow bowl or pie plate. Add the tilefish fillets to the marinade turn to coast and let marinate at room temperature for 15 to 20 minutes (cover with plastic wrap).


Preheat your grill to medium high heat.


Arrange the salad greens, scallions and radishes on a large serving platter and set aside.


Remove the fish from the marinade and brush with a little olive oil and then grill the tilefish, flesh side down first, for 5 minutes flip and grill for another 6 minutes or until just opaque when fork tested. 


To serve, transfer the fillets on top of the salad and drizzle over the Avocado dressing: Garnish with lime wedges. Looks like H&D are getting along just fine, now if we could just get Delicious to put the cap on the toothpaste all would be peachy. 


Grilled Middle Eastern Inspired Whole Branzino with a Tahini Lemon Dressing Serves 4
Some say that I rely too heavily on my Half Lebanese heritage while creating recipes, to which I reply; "Haters gonna Hate!" or "I think someone needs a Hug." Seriously, this dish is the Mirage of flavor you have been searching for.


Ingredients
2 Whole Branzino Scaled and Gutted with the heads left on about 1½ to 2 pounds each: Of Course you could use Sea Branzino , Sea Bream (Durato) or Snapper with great results
¼ cup of olive oil
The juice of 2 lemons
1 tablespoon of finely grated lemon zest
¼ cup of fresh chopped cilantro
3 cloves of garlic crushed and minced fine
2 teaspoons of smoked paprika
1 teaspoon of ground cumin
½ teaspoon of ground turmeric
1 to 2 good pinches of crushed red pepper (pinch like you mean it!)


For the Tahini Lemon Dressing
¼ cup tahini
The juice of 1 lemon or more to taste
2 tablespoons olive oil
½ teaspoon ground turmeric
Salt and Pepper


How it's done
First make the Lemon Tahini Dressing by whisking the ingredients in a small bowl; adjust lemon juice to taste and season with salt and pepper and set aside.


Prepare charcoal or preheat grill to medium heat (400° degrees)


Pat the fish dry with paper towels, both inside and out and make three cuts (crossways) into both sides of the fish (Metro will do this for you) and place in a large glass dish.


Next whisk the marinade ingredients with 2 good pinches of salt in a small bowl. Take the marinade and gently rub into the fish and into the chest cavity; cover with plastic wrap and let marinate on the counter for 20 to 30 minutes. 


If you want to marinate sooner you can, just please let the fish come to room temperature before grilling.
Remove the Branzino from the marinade and season both sides of the fish with a little more salt.


Grill the fish on the medium heat for about 10 to 12 minutes per side or until the meat is just opaque when fork tested.  

 

To serve, transfer the fish to a large serving platter and garnish with lemon wedges. Now comes the fun part, as you or your guests dig into the perfectly cooked fish, you drizzle the Tahini Lemon dressing over the fish and get ready for sultry looks paired with drooling mouths.
