Good morning to all of our beloved friends and clients and as you well know, this Sunday is Mother's Day.

 

Now as most of you know I have and will always be a Mama's Boy...Oh, does that make me less of a Man in your eyes because I used to have "Date Nights" with my Mom? Wow, I guess some of us forgot we were in a "no-judge" zone...some how this communal nest of safety is starting to feel a little shaky. But I digress. Well, what I am trying to say is that it's not going to be a Normal Mother's Day this year and although some of you might not have the traditional gatherings, there are a couple of silver linings to the "New Normal" that you might even enjoy. For one, you don't have to see your in-laws this year and hear how there kid is crushing it at University. Come to think about it, you also don't have to see that Aunt who's always bringing her new boyfriend...I swear the one she brought last year was smoking in my bathroom (good riddance Carl or whatever your name was). Now those tiny bright spots aside, we do have to make all the Moms out there feel especially loved this year. And by the way, I am strongly advocating that any Mother, human or otherwise should be adored this year. What are you talking about Fish Man? Hey, if your Dog just had puppies, make her a Liver Cake...you see a Cow that just had a calf, well offer up some cheese...well not cheese but maybe a handful of clover or something. Now regarding all the Mothers in our lives, you can give them what they really want...a quiet room without you in it and a buttery Chardonnay or the next best thing, a home cooked meal from you complete with a coupon for a full kitchen cleaning. Oh, but for the love of Cod, do not forget the Chardonnay. Well, should you be looking for a couple of tasty dishes for this weekend, look no further then today's recipes featuring Spiced Barbequed Halibut with a Fennel Salad & Grilled Cod with Green Olives and Lemon.


Seriously, to all the Mothers out there, THANK YOU, THANK YOU, THANK YOU for your never ending love and nurturing guidance. We could never pay you back but we can promise you a bottomless glass this Sunday. Now to the Fish Business at hand, there our some new procedures we have implemented in the hopes of delivering more excellent services and products while keeping us all safe and they are as follows. 


UPDATED POLICIES AND PROCEDURES AND EMAIL ORDERS


Curbside Service is still available for all orders both FRESH FISH and TAKE-OUT, we just please ask for your patience while we gather your order and safely deliver it to your vehicle.  Of course you can call in your order and we will give you a designated time frame in which to pick up your order. That said, we would love to tell you your order will be ready in 30 minutes or less but unfortunately we must schedule it for later in the day as we do butcher every piece of fish that is brought into Metro.


You may now order Fresh Seafood (Fresh Fish, Shrimp, Crab, Clams etc.) online with a minimum of 48 hours in advance.  Just Email us at  lobsterman@metroseafood.com and please put ORDER in the subject line. Please include your full name, the day you would like to pick-up (curbside) along with your phone number so we may call you back to confirm your order. We will call you to get your credit card information. Please see the body of this email or check our website for current fresh fish availability. Since we cannot get back to you immediately please call the store for all current pricing.


Regarding Take-Out (Hot, prepared meals from our specials and regular menu); Things have changed slightly, we please ask you to call earlier in the day and place your order. We will then let you know what is the next pick-up time.  During our peak lunch and dinner hours we cannot always guarantee 30 minutes or less but I promise we will try.


We are still delivering (free of charge to those in our community who are at the greatest risk (the elderly as well as those with immune deficiencies). Please call at least 24 hours in advance so we can assist you better. Also, please know that our Curbside Service is completely safe and you never have to leave your car. Just pop the trunk and we will drop your order in.


Regarding phone calls; With only six phone lines it is not uncommon for all lines to be busy, PLEASE FEEL FREE TO LEAVE YOUR NAME AND NUMBER ON THE ANSWERING SERVICE AND WE WILL CALL YOU EARLY THE NEXT DAY Also along with our fresh fish offerings, we also carry fresh produce (Asparagus, French String Beans, Salad Mix, Potatoes, Onions, Carrots and so much more). Moreover, we have a full line of Rice, Imported pasta, olive oil and vinegars so please do not hesitate to ask for anything at all as we would love to save you another trip to the store.


Seriously just ask, if we have it, you'll have it.


And lastly, We know that along with the obvious health issues some of you might be finding yourself in severe financial crisis, due to layoffs during this time. Please do not hesitate to call the store or
direct message us on Facebook or Instagram so we may provide a hot meal, free of charge, to those in need. This will be practiced with the utmost discretion maintaining complete privacy to all of those involved. You have plenty to worry about but we will have no one in our community go hungry tonight.

Spiced Barbequed Halibut with a Fennel Salad Serves 4
Here's the deal, the Halibut is lovely and you can put a shoe on the fennel salad and it will sing, but together it becomes Diane Ross and the Supremes..."I hear symphony, a tender melody ...." Don't stop you're doing great.


Ingredients
¾ cup of Lebneh or Greek style yogurt
1 tablespoon of prepared creamed horseradish

1 medium fennel bulb (including fronds), halved and thinly sliced...if you have a mandoline little chef
this is the time to break it out and feel your culinary prowess swell...that didn't come out right.
1 green apple, cored, halved and thinly sliced
1 medium carrot, grated
1 celery stalk (including leaves), thinly sliced
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon cayenne pepper
¼ teaspoon of Smoked Paprika
Olive oil for grilling
Salt and pepper
4 Halibut fillets 6 to 8 ounces each skinned; this also works great with Salmon fillet
4 tablespoons of roughly torn cilantro leaves, to serve


How it's done
Prepare your charcoal or preheat your gas grill to high heat.


To make the Salad, mix the Lebneh and horseradish in a bowl, then add the fennel, apple, carrot and celery and mix; set aside for 10 minutes to let the flavors meld the season with salt and pepper to taste.


Meanwhile, in a small bowl mix together the ground cumin, coriander cayenne pepper and paprika and then sprinkle the mix over the flesh side of the Halibut fillets, rubbing in the spices a little.

 

Drizzle each Halibut fillet with a little olive and grill, flesh side down first for 5 to 6 minutes per side or until opaque when fork tested.


To serve, divide the fennel salad among four plates and top with a halibut fillet; garnish with cilantro leaves. Please don't call your mother and berate her on why you never had fennel salad before...she did her best on what she knew and you have to admit you liked those string beans with the French's Fry Canned Onions on top.


Grilled Cod with Green Olives and Lemon Serves 4
I don't know about you but my life is basically distilled into one mantra, "I wish that life made its own sauce." Most of the time it seems life always provides us with a bitter pill or spoonful of medicine to "teach" us but every once and awhile I would like it to provide a sauce of love I can sop up with crusty bread. Well, this dish delivers all the lovely sauce you can handle. #lifesauce Okay, stop giggling.


Ingredients
1½ to 2 pounds of Cod fillet (Note: fold over the thin end pieces to make an even thickness); you can use hake or halibut with great results
½ cup of green imported olives pitted and chopped
¼ cup of olive oil
The juice of 1 lemon
½ teaspoon of finely grated lemon zest
2 cloves of garlic crushed and minced fine
2 teaspoons of honey
1 small pinch of crushed red pepper flakes
1 teaspoon of fresh chopped oregano or ¼ teaspoon of dried oregano
Salt and Pepper


How it's done
In a small bowl whisk together the olives, olive oil, lemon juice, lemon zest, garlic, honey, red pepper flakes and oregano; season to taste with salt and pepper and set aside.


Preheat your gas grill to high heat.


Pat the fillets dry and season both sides with salt and pepper. 


Cut a large enough piece of heavy duty aluminum foil as to hold the cod so you fold it over to make a package crimping up the 3 sides of your foil package.


Brush each piece of foil with olive oil and place the fish on each piece of foil. Divide and spoon the olive mixture over each fillet and seal the three sides of the package; let the package sit at room temperature for 15 to 20 minutes. Lay the package on the grill and cook for 10 minutes. 


To serve, place each packet onto four plates and watch as your dinner mates unwrap the revelry of their new Saucy lifestyle. #thesaucylife #sopuplife
