I personally am thankful that our current situation and the weather not being warm enough, prevents folks from throwing Pool Parties. The fact is that I am still carrying my "quarantine baby" (extra 10lbs) and there are no antibodies strong enough to unsee this hot mess should I don a speedo.

And lastly, we will always be welcoming to all the Little Chefs out there who lovingly make culinary magic every day. I have created a couple of easy recipes for you to keep the delicious wizardry going including Grilled Clams with a Classic Salsa Verde & Grilled Lobster with Lime Cilantro Vinaigrette.   On a serious note, we at Metro would like to extend our deepest gratitude to those brave souls and their families who have made the ultimate sacrifice for this Great Country we live in.

TODAY'S FEATURED RECIPES

Grilled Clams with a Classic Salsa Verde Serves 4 for appetizers or Me for dinner...don't you dare judge me.
If you would like to have a perfectly lovely brunch, by all means, roll out your famous "Egg Bake" again...I'll be the one pouring hot coffee in my lap to stay awake.

Let's kick our next brunch right in the Frittata little chef with this easy and zesty Clam dish.

Ingredients
2 cloves of garlic chopped roughly
1 cup coarsely chopped fresh parsley
4 anchovy paste
2 tablespoons capers, rinsed
1 tablespoon chopped fresh basil
1 tablespoon of chopped fresh mint
1 tablespoon finely grated lemon zest
2/3 cup extra-virgin olive oil
Salt and pepper

For the Clams
3 dozen little neck or Top Neck Clams...I prefer the slightly larger Top Neck Clams
1 cup dry white wine
3 tablespoons chopped fresh flat leaf parsley
2 tablespoons butter

How it's done
For the Salsa Verde
Place the garlic, parsley, anchovy paste, capers, basil, mint and lemon zest in a food processor or blender. With the motor running, slowly add oil until just blended. It's okay if sauce still has a little texture to it; Season with salt and pepper; set aside.

For the Clams
Rinse and scrub the clams well in cold running water and soak them in ice water for about 30 minutes changing the water one time.

Place the clams in a stock pot along with wine, parsley and butter. Bring to a boil over high heat.

Reduce heat to medium, cover tightly and cook, stirring once or twice, until the mussels open, 6 to 7 minutes.

Transfer the clams to a large bowl with a slotted spoon.
(Discard any unopened clams.)

Pour the broth through a fine-mesh sieve and set aside. Note: you will only be using a small amount of this liquid gold, so freeze the rest for future use.

Preheat grill to medium-high heat

When cool enough to handle, remove the top shell from each. Place the clams in their half shells on a baking sheet.

Add a scant teaspoon of the reserved broth to each, then top with a generous dollop of salsa verde.

Grilled Lobster with Lime Cilantro Vinaigrette Serves 4 very grateful souls
The only snag I can see with this dish is that the people you make if for will be under the assumption that you Love them with all of your heart...no joke. I still get calls from my wife's great Aunt, asking me if my "Lobster could use some Butter" ...not cool Aunt Ann.

Ingredients
For the Lobster
4- 1¼ Lobsters...we at Metro carry the lovely creatures that hail from the cold waters of Nova Scotia
Salt and pepper
2 to 3 tablespoons of olive oil for brushing

For the Vinaigrette
¼ cup fresh lime juice
2 tablespoons fresh Cilantro
½ teaspoon of finely grated lemon zest
1 garlic clove mashed with the flat side of your chef knife
A good pinch of crushed red pepper flakes
1/3 cup of your best olive oil

How it's done
For the Vinaigrette
Whisk together all of the ingredients except the olive oil in a small bowl. And then whisk in the olive oil in a steady stream; season to taste with salt and pepper and set aside at room temperature.

For the Lobster
Preheat your charcoal or gas grill to medium high heat
Bring a large pot of water to a rolling boil and cook the lobsters for 5 minutes then put them immediately in a large tub of ice water to stop the cooking.

With a large chef knife split the lobsters completely in half, wash out the bodies, dry and gently crack the claws the back end of the knife.

Note: this step can be done free of charge at Metro just call in advance and we will perform this with love and honor...no joke.
Season the cut sides of the lobster with salt and pepper and brush with the olive oil

Grill the lobsters, cut side down on the grill for 4 to 5 minutes and flip and grill for another 4 minutes with the grill lid closed or until the tail is just opaque when knife tested. Let the lobster cool to room temp.

To serve, place the lobsters cut side up on a large serving platter, cut side up, and drizzle over the vinaigrette. Garnish with lime slices and whole Cilantro leaves. Just a word of advice, try not to make eye contact with your Dinner Mates, they will interpret it as a salacious culinary "come on" just ask Aunt Ann.

EAT FISH LOVE LONGER!
