Metro is open on Monday, December 21st from 9-5 PM and 28th from 9-2 hours
On December 22nd, 23rd, and 24th we have regular hours with the last pick up on the 24th at 1 PM 
with tent side pickup.

Metropolitan Seafood & Gourmet is fully prepared to make your Holiday a Delicious one indeed.

Good morning to all of our beloved friends and clients...Some of you (including me) have been missing fondly the start of the holiday season parties in our current state of affairs.

You know what I mean, going over to your family and friend's houses and recapturing that youthful glory of over indulgence and by the way, doing it unapologetically. What, you don't know what I'm talking about? Really? You've never stood over a bowl of Guacamole and made it your personal mission to polish off that glorious emerald dip like a wolf feasting on a fresh kill. Or perhaps you remember hanging out in the kitchen while the hostess carefully spikes the Eggnog and while she brings the elixir out to the thirsty crowd, you pour yourself a goblet of Brandy like your on the set of Game of Thrones...good memories. Well of course these days Holiday Parties and kissing the "wrong" person ("Honey, I swore that was you...") under the mistletoe is on hold. So what can we do for fun these days? I'm glad you asked...Now keep in mind this was not my idea but a few of my clients called me last week (they are members in a "Gourmet" club) and asked if I would share some of my recipes for an upcoming Zoom Gourmet Club get together. Of course I said yes but under one condition, I be able to attend the Zoom session...that didn't turn out so well for them but I had a blast. Oh, I should tell you the parameters of the meeting, so each member was making the same dish, I supplied the Appetizer recipe which was Baja Shrimp Cakes, seriously good with an Oaky Chardonnay or in my case, some Casamingos Tequila. Well the event started at 7:00pm and by that time everyone should have been done cooking and ready to "Zoom" mingle.

 

Well, I made that dish at least 50 times so I was ready a good 45 minutes before the event started and well I guess, had one to many Casamingos.   Truth be told, I really don't remember much about the event except Janet, the Club President sent me a very candid email the next day asking me why I was shirtless and trying to get the group to see how many Shrimp Cakes they could get in their mouth at once (just in case you're wondering, I fit 9 in my mouth). Well, I quickly replied back with the most sincere apology but not two minutes later Janet replied "For heavens sake, Fish Man the group was not offended we just wanted to make sure that Sally got full credit for besting you with 11 Shrimp Cakes in her mouth, in fact, the next Soirée is in two weeks and we need a Main Course recipe from you Tiger." Well as you can guess, I'm now the Club's Vice President and should anyone want to have a "Zoom" Cooking party of their own, please do not hesitate to email me.

 

I've literally written over 2000 recipes during my tenure as the Funky Fishmonger and I would love to share them with you. In fact, today I present two new recipes to you featuring Creamy Shrimp Soup with Baby Spinach & Roasted Salmon with Creamed Leeks and a Cremini Tomato Sauce. Full disclosure, that story was completely true except for the part about my debaucherous behavior but seriously, it was a great event.

Creamy Shrimp Soup with Baby Spinach

Serves 4

This is one of those meals where it is about the journey and not the destination. A weekday homemade soup in well under an hour...I hope you don't get bored playing with your dinner mates in the kitchen and maybe engaging in a little towel snapping to pass the time away...forget the towel thing, someone always gets a welt...yes, me.

Ingredients

4 tablespoons unsalted butter

1 Sweet Red Bell Pepper diced

4 large Shallots diced

1 quart of Fish Stock...you can use Vegetable or even Chicken stock which is very cool because Metro makes all three

Half of a 5-ounce package of Baby Spinach

½ cup of Whipping Cream

1 good pinch of Crushed Red Pepper Flakes

1¼ to 1½ of Medium Shrimp peeled and deveined...Metro will do this for free and while they're cleaning your shrimp you can have one of the Fishmongers gently whisper an ancient Sailing story in your ear...it's an option...I'm just saying

4 tablespoons fresh chopped Basil

How it's done

Melt butter in a heavy medium saucepan over medium heat. Add bell pepper, crushed Red Pepper, and Shallots and sauté until almost tender, about 3 minutes. Add fish stock and cream and bring to a simmer. Add the Rock Shrimp and Spinach and simmer, uncovered until the shrimp is just opaque when tested for about 3 minutes. Mix in basil and season the soup to taste with salt and pepper.

To serve, look in the mirror and give yourself a passionate soul kiss for making a heartwarming meal for your loved ones in under an hour...which included checking your emails and making two Facebook posts...Status: "Just made the Shrimp Soup from Metro...I think I'm going to get lucky tonight" ;)

 

Roasted Salmon with Creamed Leeks and a Cremini Tomato Sauce

Serves 4

How do you stay warm on cold days? Yes, layering my chilly travelers. This dish will single-handedly teach you how to warmly cloth the naked soul...a little over the top Fishman...sorry. Seriously it's very easy.

Ingredients

For the fish

4 each 6 to 8 ounce Salmon Fillets scaled with three knife scores on the skin side on each fillet. Farm-Raised or Wild will do but you could also use Halibut or Black Cod

Salt and Pepper

4 tablespoons of olive oil

The juice of 1 lemon: How about that free lemon you just got from Metro...that place is so awesome, I just wish Mark had a little more hair.

For the Creamed Leeks

4 ounces of unsalted butter

4 leeks, sliced into rounds, white part only

1 cup or more of heavy (whipping) cream

For the Cremini Tomato Sauce

2 tablespoons of olive oil

2 cloves garlic chopped fine

12 ounces of Cremini Mushrooms cleaned and chopped

1 pint of Grape tomatoes quartered

The juice of 1 lemon: Just ask for 2 it's still free

How it's done

Preheat oven to 400 ° degrees

For the Salmon

Season the Salmon well with salt and pepper and place on a baking sheet (allow the fish to sit at room temperature for at least 20 minutes). Drizzle over the olive oil and lemon juice and bake, skin side up, in the oven for 15 to 18 minutes, or until cooked through (barely opaque when fork tested)

For the Creamed Leeks

While fish is roasting heat the butter in a frying pan and gently fry the leeks for five minutes until they start to soften.

Next, add the cream and simmer for about 4-5 minutes, until the leeks are soft and the cream has reduced slightly.

For the Cremini Tomato Sauce

Heat the olive oil in a pan and gently fry the garlic and mushrooms for 4-5 minutes. Add the tomatoes and simmer for a further 3-4 minutes. At the end of cooking, stir in the lemon juice and season salt and pepper to taste.

To serve, spoon a pile of the creamed leeks into the center of four serving plates. Place the roasted Salmon on top and drizzle over the Cremini Tomato Sauce. I know what you're thinking, should I seductively peel down my mask and bellow out "Come and Get it..." No, you should not and besides, you're in your own house, take off that mask you kook.
